Wine-making process: Fermentation for 10 days then maceration for 3 weeks. Aged in vats for 6 to 12 months.
Tasting comments :
Deep garnet colour with purple glints. The promising nose, combining dark fruit and spicy notes, is frank and delicate. The clean palate with a silky tannic structure offers the same aromatic notes with a subtle, well-integrated woodiness.

Tasting comments: Clear and bright in colour. The nose is ripe, combining floral notes with fruit and fine minerality. In the mouth, the attack is firm and fresh. The structure is pleasant and harmonious both as it develops and in the finish. A delightful wine.

Wine-making process: Cold-racked between 12 and 48 hours, fermentation at 16°C. Aged on lees to give unctuosity and roundness.
Tasting comments: Bright and a subtle pale yellow in colour. The characteristic nose with accents of ripe citrus against notes of the box is typical of ripe Sauvignon. The palate is supple, beautifully fresh, and tempered by magnificent aromatic maturity in the finish.

Wine-making process: Vinified by pressing directly with a pneumatic press, perfect control of temperatures between 16 and 18° during fermentation, which lasts from 2 to 3 weeks. Fining followed by filtration.
Tasting comments: Pale in colour, the wine is bright light pink.
The impressive nose is marked by acid drop aromas; the palate is supple with a frank very fresh attack with distinctive amylic aromas. As a whole, it is generous, extremely thirst-quenching and highly drinkable. This is a true and technically very accomplished rosé made by direct pressing.

Vinification and aging: Vinification without sulfite. Work with minimal oxygen. In the fermentation phase addition of oxygen in the homoeopathic form if necessary. Fermentation for 3 weeks. Malolactic fermentation.
Tasting notes: The color is vibrant, deep carmine red. The nose is very open on a ripe grape, the mouth is delicious, on still firm tannins. This wine is the fruit of the expertise of a winemaker who vinifies without any addition of sulfite, resulting in a juicy, powerful blend, expressing all the terroir from which it comes. A wine without artifice.

Vinification and aging: Cold maceration depending on the quality of the grapes. Slow start of alcoholic fermentation with pumping over 2 to 3 times a day then load shedding. Gentle maceration for 3 weeks at a temperature of 22 ° C. Aging in 225L French oak barrels (1/3 new barrels) without racking, in a reducing environment to preserve maximum fruit.
Tasting notes: The Merlot escorted by the two Cabernets, collaborate in this cuvée. The robe is deep, purplish, followed by pleasant aromas of candied black fruit, with caramelized and spicy touches. The mouth is elegant, underpinned by tannins that are very present but devoid of aggressiveness which underline the long and complex finish.

Wine-making process: Cold maceration prior to fermentation. Delestage adapted to suit the structure of the wine. Three weeks’ fermentation. Aged in vats.
Tasting comments: The wine is shot through with cherry red glints. The nose gradually becomes more powerful with subtle, roasted, woody notes. A well-structured palate, full and powerful, mingles with just-ripe fruit. The finish is full-bodied and amazingly protracted.

Tasting comments: A bright, deep garnet in colour. The nose evokes underbrush in the autumn. The palate is powerful, with aromas of very ripe fruit accompanied by delicate notes of cedar. This biodynamically produced wine encapsulates the exceptional Castillon terroir, leaving room for nature. A natural wine without technological artifice.

Wine-making process: The juice is cold-racked. Temperatures are kept at 25°C during alcoholic fermentation with cap-punching for gentle extraction. Maceration for three weeks and running off. Aged in thermoregulated stainless steel vats.
Tasting comments: The colour is incredibly intense due to slow, well-controlled extraction. The rich nose is followed by a palate that is nothing short of superlative: powerful, dense and well-balanced with great sweetness. A well-made wine from the vineyard to the bottle.
